Brrrrrr. My very first thought stepping outside into the cold. Secondly, this is the exact type of weather for homemade chicken soup. I stopped at the grocers and was able to score a pack of chicken( a little under 2lbs) for less than five dollars.
Ingredients and plan
Chicken ( up to 2lbs)
1/2 cup onions and peppers
1/2 cup celery
2 tsp minced garlic
1/2 cup carrots
3 small cut red potatoes
2 small cut sweet potatoes
3 tbsp flour
Herbs( a pinch of rosemary, thyme, chives, cilantro, oregano, basil and parsley).
1/4 tsp salt
1 tsp Cayenne
4 cups Vegetable broth
1 cup Mixed vegetables
1/2 cup kale
1/2 cup heavy cream
Rinse, dry and season chicken. Brown in pan of 2tbsp of canola oil and remove.
Add onion, peppers, garlic and celery to saute. Next carrots and flour.Pour in Vegetable broth and add herbs. Place chicken and 2 tbsp tomato paste. Cover and boil for thirty minutes.
Remove lid and add kale, mix vegetables and heavy cream. Boil for an additional thirty minutes. Turn off and lest rest 10-15 minutes before enjoying.
